چکیده

Sixty pasteurized milk samples were collected aseptically from different processing dairies and analyzed for total viable count and aerobic spore count. Bacillus subtilis was found to be the predominant aerobic spore former (33.33%) followed by B.megaterium (24.44%), B.licheniformis (17.77%), B.cereus (8.88%), B.coagulans (6.66%), B.pumilus (4.44%), B.sphaericus (2.22%), and B.circulans (2.22%). The total viable count (log 10 cfu per ml) varied between 4.18 ± 0.095 and 4.43 ± 0.081 among nine different processing dairies and it was the lowest in lab-pasteurized samples (3.65 ± 0.078). The mean aerobic spore count (log 10 cfu per ml) varied between 3.56 ± 0.051 and 3.87 ± 0.112 among the processing dairies and the lowest values were obtained in lab pasteurized milk samples at 3.09 ± 0.085. Out of forty five Bacillus species isolated, twenty five isolates were positive for proteolysis and seventeen for lipolysis and twelve isolates for both proteolysis and lipolysis.

Real-time PCR detection of Paenibacillus spp. in raw milk to predict shelf life performance of pasteurized fluid milk products.

Psychrotolerant sporeformers, specifically Paenibacillus spp., are important spoilage bacteria for pasteurized, refrigerated foods such as fluid milk. While Paenibacillus spp. have been isolated from farm environments, raw milk, processing plant environments, and pasteurized fluid milk, no information on the number of Paenibacillus spp. that need to be present in raw milk to cause pasteurized m...

Occurrence of Mycobacterium bovis and non-tuberculous mycobacteria (NTM) in raw and pasteurized milk in the northwestern region of Paraná, Brazil

Milk is widely consumed in Brazil and can be the vehicle of agent transmission. In this study, was evaluated the occurrence of Mycobacterium bovis and non-tuberculous mycobacteria (NTM) in raw and pasteurized milk consumed in the northwestern region of Paraná, Brazil. Fifty-two milk samples (20 pasteurized and 32 raw) from dairy farms near the municipality of Maringa, Parana State, Brazil were ...

Identification and characterization of psychrotolerant sporeformers associated with fluid milk production and processing.

Psychrotolerant spore-forming bacteria represent a major challenge to the goal of extending the shelf life of pasteurized dairy products. The objective of this study was to identify prominent phylogenetic groups of dairy-associated aerobic sporeformers and to characterize representative isolates for phenotypes relevant to growth in milk. Analysis of sequence data for a 632-nucleotide fragment o...

Physicochemical characteristics and storage stability of clarified butter fat « smen » produced from pasteurized and non-pasteurized milk

Smen is a milk fat isolated by ‘boiling-off’ water. Milk fat was first converted into butter and then into smen. Smen product is utilized for culinary cooking and frying of different food. Smen has better shelf-life than other indigenous dairy products due to its lower moisture content. However, it undergoes deterioration (lipolysis and oxidation of milk fat) causes flavor impairment, lowers nu...
